Oven Not Heating Evenly? Here's What's Wrong

Uneven oven heating is most often caused by a drifting temperature sensor or thermostat, a weakening bake or broil element that no longer heats fully, or a convection fan issue that's failing to circulate air properly. A temperature-sensor problem is the most common of the three.
Why "uneven" is actually a useful clue
"My oven doesn't heat" and "my oven heats unevenly" point to different problems. A completely dead oven usually means a failed igniter (gas) or a fully burned-out element (electric). Uneven heating — food browning faster on one side, or the oven reading 350°F while actually running hot or cold — points somewhere more specific, and it's almost always one of three things.
1. A drifting temperature sensor or thermostat
This is the most common cause. The sensor (a small probe usually visible at the back or side of the oven cavity) tells the control board the actual internal temperature. When it drifts out of calibration, the oven thinks it's at 350°F when it's actually running hotter or cooler — which shows up as inconsistent baking results rather than total failure. This is a standard, moderate-cost repair.
2. A weakening bake or broil element
Electric ovens have separate elements for baking (bottom) and broiling (top). An element can partially fail — still glowing and producing some heat, but not reaching full output — well before it fails completely. This often shows up as one side or one rack level of the oven cooking noticeably slower than expected, since the heat distribution from that element is weaker than it should be.
3. A convection fan that isn't circulating properly
If your oven has a convection setting and the fan motor is weak, dirty, or the fan blade is loose, hot air isn't being distributed evenly across all racks. This tends to show up specifically when using convection mode, with standard (non-convection) baking working more normally.
A simple test you can run before calling
Place an inexpensive oven thermometer in the center of the oven, set the oven to 350°F, and let it fully preheat. Check the thermometer against the display. A difference of more than about 25°F consistently suggests a sensor or thermostat issue. If the temperature swings up and down by a wide margin repeatedly (rather than holding steady), that also points toward the sensor/thermostat rather than the element.
Gas oven uneven heating: a slightly different picture
Gas ovens can develop uneven heating from a partially clogged burner port or an igniter that's weakening but not fully failed, producing a smaller flame than the burner is designed for. The temperature-sensor cause still applies to gas ovens too, since most modern gas ovens use the same electronic sensor and control board architecture as electric models for temperature regulation.
When it's worth calling sooner rather than later
Uneven heating on its own isn't a safety issue — it's an inconvenience. But if it's paired with a burning smell, visible sparking, or a gas smell, treat it as more urgent and stop using the oven until it's checked.
Frequently asked questions
Can I recalibrate my oven's temperature myself?
Many ovens have a built-in offset/calibration setting in the control panel (check your manual for the exact steps) that can correct a MINOR drift. A larger, persistent inaccuracy usually means the sensor itself needs replacing, which a calibration adjustment won't fix.
